Summer Course Program (SCP) 2019

Department of Food Science and Technology and SEAFAST Center, Bogor Agricultural University and SEAFAST Center will conduct Summer Course Program (SCP) 2018 entitled “TEMPE: Indonesian Cultural Heritage for the World” on 15 - 22 June 2019 at FATETA-IPB and Pilot Plant of SEAFAST Center IPB Dramaga, Bogor. This SCP 2018 will cover (1) lectures related to the recent researches about tempe,  (2) hands-on experience on pilot production of soy and non soy-based tempe, and (3)  industrial visits. 

Several lecture topics in this SCP 2019, will be:

1. Tempe as the cultural heritage of Indonesia

2. Basic Fermentation: Theory and applications 

3. Tempe fermentation: Science behind its nutritive value 

4. Tempe fermentation: Production and safety concerns 

5. Biological and functionilities of tempe from nutritionist’s perspective 

6. Homini Tempe and other non-soy tempe

7. Physiochemical characteristics of tempe and nonsoy-based tempe 

8. Tempe-based food product: Development strategies 

9. Hands-on experience (labwork) of tempe production
